#8 Make one new recipe a week, pt. 10

I have to admit I’ve been majorly slacking on making a new recipe each week. This summer has been so busy and so go!go!go! that I’ve eaten a lot of meals on the run and eaten out quite a bit. However, I’m recommitting myself to cooking and started this weekend with a quick and easy (but delicious!) Sunday dinner. I used my crock pot to make shredded chicken (check out the recipe here — it’s so easy and I promise you will use it all the time!) and then drizzled olive oil on a flour tortilla, placed the chicken, mozzarella cheese and tomato on the tortilla. I rolled it up and cooked it until the cheese was gooey and melty on my grill press and viola! A delicious chicken, cheese and tomato quesadilla in about 10 minutes (not counting the 4 hours in the crock pot for the shredded chicken).

I served it with a side of brussels sprouts and it made for a great Sunday meal. I have a work trip this week, so will be light on the cooking but next weekend I’m looking forward to trying this chicken friend rice recipe. What’s the last thing you cooked in under 25 minutes that blew your mind?

    In under 25 minutes? That’s a tough one. I love to cook, but I’m pretty slow. For some reason, it usually takes me a long time, even for “quick” recipes

      yeah, me too actually! that’s why i was so pleased that this actually took about 10 minutes total. if my grill press was larger, it would’ve taken about 5 🙂

        Have you ever tried any recipes from the Food Wishes blog? The few I’ve tried have been pretty amazing. Most aren’t under 25 minutes, but it is well worth the wait. http://foodwishes.blogspot.com/
