I have a confession to make: I’ve fallen off of my recipe making. I have all the usual excuses, but mostly my poor planning is to blame. Right now my fridge contains a bowl of leftover chicken pasta (which was actually a new recipe I made), soda, milk, basil and champagne. Yep, that’s it. Oh and some mozzarella cheese and a pack of bacon. So even though I have some great cookbooks, there is not much I could put together with what I currently have. I’ve decided that I need to devote some time each week to actually planning out what I’m going to cook / eat. This is what everyone recommends and I should’ve been doing it from the beginning.
I probably won’t have time to get to the store for a few days, but here are the recipes that are on my radar (along with my shopping list for the week).
Garlic Knots – this should be an easy, fun appetizer to make. I already have all the ingredients so nothing extra to buy!
Lemon and Herb Crockpot Chicken – I love using my crockpot. It is the easiest thing in the world and I’ve really enjoyed everything that’s come out of it so far. I’ll serve this with veggies and brown rice. Items to buy: Whole chicken, fresh rosemary, two lemons.
Cod Mare Chiaro – I love seafood and this sounds delicious and pretty simple. Items to buy: Cod, chopped tomatoes, capers, oregano and basil.
I’m excited about getting back on the horse as far as my recipe making goes and looking forward to sinking my teeth into these delicious recipes!
