Butternut Squash and Sausage Frittata Recipe

This past weekend, we hosted a brunch at our home where I got the bright idea to make a bunch of new-to-me things. Including a butternut squash and sausage frittata recipe. For the record: I don’t like or eat eggs. Yes, I know. Frittatas are made with eggs. What do ya know? Maybe I do like eggs. I’m not sure, but I definitely liked this! It was the first thing to be gobbled up at our brunch, so I wasn’t the only one. πŸ™‚ 

Butternut Squash & Sausage Frittata 

Butternut Squash and Sausage Frittata

Serves 4
An easy, quick squash and sausage frittata.

Ingredients
  1. 2-3 links of cooked chicken sausage, chopped
  2. 1/2 diced red pepper
  3. 1 butternut squash chopped and cubed
  4. 5 medium sized eggs
  5. fresh rosemary and thyme
  6. salt and pepper
Instructions
  1. preheat oven to 375
  2. cook red pepper, sausage and squash until heated through (about 5-10 minutes)
  3. while pepper, sausage and squash is cooking, beat eggs, salt, pepper, and herbs until well combined
  4. pour eggs over filing and cook on stovetop until the edges set
  5. once edges set, cook in oven for 5-10 minutes until cooked through
Notes
  1. you can add whatever you have on hand - that's the great thing about frittatas! just make sure the ingredients are fresh and high quality.

 This is a really easy recipe that works for breakfast, brunch or dinner. It’s pretty hard to mess up, so might be a good recipe to make with kids or with those less adept in the kitchen. AKA – an “I think my husband could make this” recipe. πŸ™‚ Give it a go!

    I love eggs, so I take my suggestions with a grain of salt, but I’m a huge fan of the crustless quiche that’s on my site. Not hugely different from the fritatta, but can be made ahead and eaten for breakfast all week.

      i don’t use an estimator. it’s a part of the recipe plugin i use! honestly, i’d disable that part if i could since i have no idea if it’s accurate.

    I love frittatas πŸ™‚ I feel like they’re fairly easy but look impressive for a party. I actually just made one that I’m planning on sharing the recipe for on my blog this week. I’ve never tried them with butternut squash so I’ll have to add that to my list.

    I can’t believe you don’t like eggs, Courtney…or that you THINK you don’t like eggs – ha! I love frittatas for the same reason you mentioned above – you can just throw a bunch of stuff together and it tastes good! I like to put baby spinach, grape tomatoes, mozzarella cheese and a little basil together; trust me, you’ll never taste those eggs – ha! This looks like a great recipe; thank you for sharing.

    I have a love/hate with eggs. I am VERY picky about how they are cooked, I also am not a fan of the yolk. And don’t put cheese anywhere near them. Ugh. BUT! scrambles and with veggies and things are the way to go – and that frittata looks absolutely, positively, AMAZING!
