I love, love love my morning oatmeal. I usually have a bowl of the instant stuff while I check my email at work. It fills me up and is delicious. Of course, instant oatmeal does contain some artificial sweeteners so it’s one of the things I’m giving up during my Daniel Fast. Obviously, I had to come up with a replacement because I can’t just not have my oatmeal. And because I also love my crock pot, I decided that day 2 of the fast would end with me throwing some steel cut oats, apples, water and cinnamon in my crock pot before bed. I awoke to this beauty:
And so how did it taste? Delicious! So yummy and just as good as my favorite instant oatmeal. Less sweet, but the apples and the cinnamon really gave it a great flavor. My oatmeal cooked in the crockpot for about 8 hours and it was perfect. If you decide to try this, I highly recommend spraying your crockpot with cooking spray so that the oatmeal doesn’t stick or burn. I did this and it worked great. Here’s the actual recipe I used:
1 cup steel-cut oats
3 cups water
2 small gala apples, chopped and cored
cinnamon to taste
That’s it! Just mix all that in your crockpot, turn the setting to low and go to bed. Wake up to a healthy delicious breakfast. My other new obsession is apples and peanut butter. It is healthy, fast friendly and delicious. I can’t believe I wasn’t eating this on the regular!
