Sometimes I’m a wonderful menu planner and have all my meals chosen for the week. And other times, I’m sitting at work at 12pm thinking, what can I scrounge up with what I have (maybe with an additional quick grocery run during my lunch break). Yesterday was one of those “make it work with what I have” days. I popped over to Trader Joes during lunch and picked up a few quick items to supplement what I had at home and decided to make quesadillas with shredded chicken that I made in my crockpot a few days prior. I had to purchase the tortillas and some extra cheese, and already had roasted sweet potatoes as well.
This is what I came up with.
Ingredients
Recipe
- Drizzle olive oil on your tortilla
- Pile high with chicken, cheese, sweet potatoes and spinach
- Season with a touch of kosher salt and pepper
- Roll it up and grill!
- Enjoy 🙂
This was quick, easy and delicious. I highly recommend you check it out soon.

I used to be a plan ahead girl until G came along. I’m constantly creating things out of whatever is in the fridge!

I’m hit or miss depending on what is happening in my life. Been a lot of miss lately 🙂
I really need to buy a crockpot. Seems like a magical tool.
Do it! I use my mom’s OLD (and I do mean old) crockpot and it works just as well as the fancy $100 versions. Pick one up at a yard sale or something if you want to try it out before you invest. You’ll love it!
Those look delicious!
They are — SO quick and tasty!
Yum, thanks for sharing! Looks pretty easy to make too, I like that!
Must try this!
It’s super tasty – I highly recommend!
