Crockpot Shredded Chicken Quesadillas

Sometimes I’m a wonderful menu planner and have all my meals chosen for the week. And other times, I’m sitting at work at 12pm thinking, what can I scrounge up with what I have (maybe with an additional quick grocery run during my lunch break). Yesterday was one of those “make it work with what I have” days. I popped over to Trader Joes during lunch and picked up a few quick items to supplement what I had at home and decided to make quesadillas with shredded chicken that I made in my crockpot a few days prior. I had to purchase the tortillas and some extra cheese, and already had roasted sweet potatoes as well.

This is what I came up with.

Ingredients

      • Shredded Chicken (I made this in my crockpot and it’s very easy – you should try it as well!)
      • Tortillas
      • Cheese – I used mozzarella because that’s my favorite
      • Roasted sweet potatoes
      • Spinach

Recipe

  • Drizzle olive oil on your tortilla 
  • Pile high with chicken, cheese, sweet potatoes and spinach
  • Season with a touch of kosher salt and pepper
  • Roll it up and grill!
  • Enjoy 🙂

      Do it! I use my mom’s OLD (and I do mean old) crockpot and it works just as well as the fancy $100 versions. Pick one up at a yard sale or something if you want to try it out before you invest. You’ll love it!
