Sometimes I’m a wonderful menu planner and have all my meals chosen for the week. And other times, I’m sitting at work at 12pm thinking, what can I scrounge up with what I have (maybe with an additional quick grocery run during my lunch break). Yesterday was one of those “make it work with what I have” days. I popped over to Trader Joes during lunch and picked up a few quick items to supplement what I had at home and decided to make quesadillas with shredded chicken that I made in my crockpot a few days prior. I had to purchase the tortillas and some extra cheese, and already had roasted sweet potatoes as well.
This is what I came up with.
- Drizzle olive oil on your tortilla
- Pile high with chicken, cheese, sweet potatoes and spinach
- Season with a touch of kosher salt and pepper
- Roll it up and grill!
