Daniel Fast Week 2

January 22, 2013 By: project30in20122 Comments

I made it to the second week of my 21 Day Daniel Fast and I have to say, I feel great. Spiritually, I feel like I’ve been able to hear the Lord’s voice more clearly and that is truly amazing. Physically, I feel great. I’m sleeping better, I’m feeling lighter and just generally I feel good. I’ve really been awed at some of the great things I’ve been able to make that are following the fast. My favorites are all the awesome pasta dishes I’ve made, using whole wheat pasta and spaghetti squash. Over the long weekend, I made pasta with homemade sauce (which is seriously amazing. you have to try this!), spinach, sun-dried tomatoes, and artichoke hearts. It was THE BUSINESS and will be eaten for lunch a few times this week.

I’ve been making my crock-pot oatmeal almost every day and I love it more each time. I’ve also taken to baking sweet potatoes in the oven and them devouring them. What else have I discovered that I love? Well, a friend recommended Buddy Fruits to me  and I finally purchased some this weekend. Buddy Fruits are little packets of pure blended fruit. The containers look like you are about to eat baby food — I got some grief for this at my lifegroup this week — but are delicious. Seriously. 1 serving of fruit, easy to carry and transport and it doesn’t need to be refrigerated. Make fun if you’d like, but I recommend you pick up a few of these yummy snacks. You will thank me later! I purchased mine for $1 each at Harris Teeter, but a quick search shows them at tons of local Safeway stores as well. Apple_Cinnamon_Flavor

My kids use these and they love them. I always want to swipe them from them but the county has rules against that.

Btw, just read your post on peanut butter. When I went vegan I became addicted to nut products, weird since I don’t like nuts in general. Ever tried whole foods make it yourself honey peanut butter- brilliant!

Also agave as a sweetener, made from real cactus and vegan.

Oh and earth life butter, also vegan. Best butter substitute that honestly taste like or even better than butter.

Still use these products even though I’m not doing the vegan thing. Put agave on everything. Used to make this agave, peanut butter and rice cake and vegan chocolate chip thing for a snack- delicious.

They are delicious, Jenn! You’d love them. I’m glad to hear your thoughts on earth life butter. I almost picked some up the other day but was nervous that it’d be gross — glad to hear it’s not! 🙂
