Summer is here – yay! In my house that means using the oven less and making no bake meals more! Since this Friday is food theme for the Friday Five linkup, I’m going to talk about some no bake summer recipes. I’m a big fan of no bake summer recipes because no need to heat up the kitchen any more than necessary, right? Right! Don’t forget to check out Cynthia and Mar and some of the other folks who link up with us – and please don’t forget to link to your hosts if you are participating!
- Caprese salad – this is probably my favorite no bake recipe ever! Just get some fresh mozzarella, add a couple slices of delicious farm fresh tomato and some fresh basil. Drizzle a little olive oil and add some kosher salt and pepper and your all set. The picture below has some grilled chicken added to it but you get the idea!
- Fruit salad – duh! This is always a great choice. Take whatever fresh fruit you can find at the farmer’s market, slice and throw in a big bowl and drizzle with a bit of balsamic vinegar. YUM YUM YUM. Can’t go wrong here!
- Peach pie energy bites. These are from Celia over at Chicago Jogger and they look amazing. Plus, is anything better than peaches? This recipe uses dried peaches but I’d actually try it with fresh sliced peaches. YUM!
- Chocolate Rice Crispy Treats. Well, this sounds yummy. Nicole over at Fitful Focus shared this recipe and it looks so tasty! Rice Crispy Treats in any form are a win in my book!
- Panzanella salad. This is such a simple salad to make – grab some fresh tomatoes, a cucumber and a loaf of crusty bread. Chop everything and throw it into a bowl with drizzles of olive oil and then sprinkle some salt and pepper over everything. Or you can use your favorite dressing. SO yummy and the simplest thing you can eat. The Pioneer Woman has a great recipe for this.

Hmm, I’ve never heard of the bread in the salad before. Since it’s suppose to be crusty bread does it act like croutons?
I love Caprese salad and made it so much that I grew a basil plant last summer. And Guess what, it’s still alive!! Hopefully I’ll keep it alive through this summer too!
I love the no-bake cookies and energy bites. Now that I can eat peanut butter again, I’m craving some too. And I love salads. I posted a couple of my favorite antipasti skewers on my blog today even.

I’m all about the no bake recipes in the summer! I tend to drink more smoothies in the summer because they are quick, easy and really refreshing!
Summer is when I get creative in the salad department. I’ll get pre-cooked chicken from the grocery store as my meat, and then throw in whatever I feel like buying that week. My favorite salad has the chicken, strawberries, apples, dried cherries, and a very light vinaigrette.

Oh my gosh. Caprese salad is my favorite! Totally making those energy bites soon. I do a knockoff of this Panera summer salad with strawberries, blueberries, and chicken that I just love. Now you’ve made me hungry… xo

I love no-bake energy bites and bars. They are a quick and healthy way to snack. I also love a Caprese salad. Really, I love anything with fresh basil 🙂

Yum to all! My no-bake summer go-to is take-out sushi, which we’re having tonight as it’s gone from 60 to 93 degrees here in less than 20 hours.
Love these ideas. I too love a good fruit salad (and going to the Farmer’s Market!). A no bake favorite of mine this time of the year is a good cold pasta salad. Yum!
Yum! These look amazing. I love no-bake recipes, especially needed since today DC hit over 90 degrees! Two more ideas for you: cucumber or zucchini noodles and shaved asparagus (Smitten Kitchen has a great recipe)! So refreshing in the heat.

Diced tomatoes, sliced cucumbers, feta and a light dressing all mixed together and chilled it a great meal!
