Oh man, y’all. This is a must make. This peach blueberry cobbler is the business and I suggest you add this it to your recipe book now. Trust me. It’s also pretty simple. I find the most onerous task is peeling the peaches. Does anyone have an easy way to do this? I boil the peaches for a bit, but find that it often takes a couple minutes of boiling for the skin to come off. Sigh. I hate that part in making the cobbler, but other than that it’s easy peasy!

Peach Blueberry Cobbler

Serves 10
A delicious peach blueberry cobbler the way your mom used to make it.
For the filling
- 4 cups peeled and sliced peaches
- 2 cups blueberries
- 3/4 cup brown sugar
- 1 teas cinnamon
- 1 teas vanilla
- 1 tbs flour
For the cobbler crust
- 1 cup flour
- 1 teas baking powder
- 1/2 teas baking soda
- 3 tbs brown sugar
- 4 tbs unsalted butter
- 2/3 cup buttermilk
Instructions
- Preheat oven to 425
- Butter a 1 1/2 quart baking dish
- Place peaches and blueberries in dish and sprinkle with brown sugar, cinnamon, vanilla, and flour
- Mix and spread evenly
- Bake for 10 minutes
For the cobbler crust
- Mix all dry ingredients in large bowl
- Cut in butter
- Add buttermilk and stir to form soft dough
- Remove filling from oven and drop spoonfuls of dough on top
- Bake for 20 minutes
- Enjoy!

yes! hardest part is the peeling of the peaches π
I just leave the peels on all my fruit. I heard somewhere that the peels have all the nutrients. Now, I don’t know if that is true but it sure saves a lot of time and energy. And I don’t even notice them… neither does my 2 year old.

Peeling peaches is never easy. Have you used the splenda brown sugar for baking? It cuts the sugar in half.

I don’t bake but I would happily accept an invitation the next time this gets thrown in the oven π my solution to peeling peaches would be to hit up the canned good aisle in Giant (but I know that defeats the farmer’s market purpose!) π looks great!

I’ll have to throw some blueberries in mine next time! I usually make cobbler with firmer peaches and peel them with a vegetable peeler. Now, if anyone has tips for fast and easy peach pitting that doesn’t mangle my peaches, I’m all ears!
