Roasted Cod with Tomatoes Recipe

The other night I center home and really just needed a quick and healthy dinner. I had some cod fillets and some farm fresh tomatoes that needed to be eaten and decided I’d take advantage of the cooler temps and roast it all. I never thought to combine both things but roasted cod with tomatoes was a total hit! It turned out to be a super easy, healthy and delicious meal and I hope you’ll enjoy it as much as we did.

Ingredients
  1. 4 cod fillets
  2. olive oil
  3. kosher salt
  4. pepper
  5. 2 medium tomatoes, sliced into chunks
Instructions
  1. Heat your oven to 425
  2. Season fillets with salt and pepper on both sides
  3. Place fillets in pan and drizzle with a little bit of olive oil
  4. Place tomato chunks on and around fish - sprinkle a little salt and pepper on the tomatoes
  5. Cook for about 15 minutes.
  6. When firm and flaky, fish is cooked.
  7. Serve on a bed of spinach and with brown rice.

    I never make cod. When I make fish it’s usually salmon. I maybe have to switch things up and try something different

    Sounds delicious! My garden has been producing some delicious tomatoes so I’ve been slicing tomatoes as a side with dinner lately. Just a sprinkle of pepper and they taste amazing!
