Run + barre + an easy dinner

Last week, I ran a quick mile before an hour long barre class at Barre 3 in Georgetown. I was nervous about how I’d feel during barre class, but in truth I loved it! I felt like the quick run was an excellent warm up. And in turn, the barre class left me all stretched out and loose after being tight from the run. Very nice compliments!

I think that a run plus yoga or pilates would work just as nicely. The general idea being that both activities compliment each other and help to maximize recovery. It worked for me!

In other news, I came home a few days ago with not much in the fridge but no desire to leave the house or order in. I decided I’d take it back to the days of English muffin pizzas. Did you guys make these as a kid? I did all the time and completely forgot how much I love them!

This “recipe” is so easy, I hesitate to even call it a recipe. Here’s what I did:

I halved 4 English muffins, drizzled pizza sauce, fresh mozzarella cheese, my favorite pineapple bacon chicken sausage and swiss chard on the halved muffins. You can use whatever combination of ingredients works for you. That’s what I had in the fridge, so that’s what I used ๐Ÿ™‚

I cooked the English muffins at 400 degrees for about 15 – 20 minutes. Then I ate…ahem, almost all of them ๐Ÿ™‚ What can I say, I’m a hungry runner! This literally took 30 minutes total and was so delicious – a highly recommend quick easy dinner or snack.

    I used to LOVE those things. Might just have to do them with the kids… maybe I can get hubby to get the stuff for tonight! ๐Ÿ˜›

    I haven’t had an English muffin in yeeeeears!!! But my go to quick meal is pretty much the same but I use whole wheat pita instead ๐Ÿ™‚ so yum!

    Ugh, loved making these are a kid with my grandmother. One of my first memorable experiences with an oven. The newspaper would come with a kids section and this was the recipe that I had to try! bringing back memories.
