Sweet and Spicy Peach Glazed Salmon Recipe

I love quick dinners. Last week, I had about 30 minutes to get dinner made so my husband could eat while I was out for the evening. I decided to do a fish dish and since we had some salmon, I figured I’d do a sweet and spicy peach glazed salmon because I had all the ingredients and it sounded delicious. Turns out, I was right. It was so good that after I made it, I was tempted to eat it all and tell my husband to eat leftovers. Luckily for him, I didn’t and so I’ll share the recipe today. 

Sweet and Spicy Peach Glazed Salmon

A quick and easy weeknight salmon dinner.

Ingredients
  1. 2 salmon fillets
  2. 1 tablespoon cajun seasoning
  3. 1 tablespoon brown sugar
  4. 1 tablespoon peach jam
  5. juice of one lime
  6. pinch of kosher salt
Instructions
  1. Mix cajun seasoning and brown sugar in a bowl and rub on salmon
  2. Cook salmon in a pan with olive oil over medium heat (almost five minutes on each side)
  3. While salmon is cooking, mix lime juice and peach job in a bowl
  4. Once salmon is almost cooked through, pour peach jam / lime juice mixture over salmon
  5. Cook for an additional 1-2 minutes then remove salmon from the pan
  6. Drizzle juice from pan over the salmon and serve immediately
  7. Add a sprinkle of kosher salt to taste

    I haven’t had any luck with baking my salmon (2 failed attempts), perhaps I need to try cooking them in a pan. Maybe 3rd times a charm πŸ™‚

    I love making salmon bc it is so easy. I usually make it the same way with just salt and pepper. I’ll have to try it this wau.

    OMG – i absolutely love salmon and eat it at least 2 times a week. Usually cook it on the Foreman grill but always look for fun spices and glazes to jazz it up a bit.

    This looks so good. I usually bake my salmon but it’s been to hot. And I seem to always make it the same. My husband will love the spicyness of this recipe! Thanks for sharing.

      you can up the spicy factor by adding more cajun seasoning and dialing back the sugar!

    Sounds amazing! Put a little salad with it (I eat salad with everything)! I love quick dinners, I have a very busy family of 5 so quick and easy dinners are a thing. Last night it was an egg white/turkey bacon/hash brown omelet night. Yes my kids will only eat omelets with turkey bacon and hash browns in them. I just had a baked sweet potato and chicken breast! πŸ™‚
