#8 Make one new recipe a month, pt. 1

December 16, 2011 By: project30in20125 Comments

I enjoy cooking. But I often find it difficult to cook a “real” meal if I’m only feeding myself. That’s partially why I choose to put “make one new recipe a month” on THE List. This way I will force myself to cook something new – instead of just making myself a (albeit delicious) tomato, mozzarella and basil sandwich each night. The challenge is to find a recipe that inspires me to give up my yummy sammie – so here is the first thing I’m going to cook:

Slow-Cooker Chicken and Biscuits!

I’m pretty excited about this. It’s also an opportunity for me to work on #13 on THE List (perfect my biscuit recipe). Of course, I can use store bought biscuits for my slow-cooker chicken, but where’s the fun in that?

I think this recipe will be a winner because it contains three things I love: chicken, biscuits, and wine! How can it go wrong? I’m pretty sure I can make this and make it delicious…I’ll be sure to report back, complete with pictures!

Let me know how the recipe turns out for you. I have the same issue with cooking (or not wanting to take the time) when it’s just me.

Oh, I will! I’m super excited – think I’ll make it this upcoming week. It will also be my first time cooking with my crock pot 🙂

You know I endorse this one! Enchiladas and lasagna both make great leftovers.
