Day 1 of the Fast

January 15, 2013 By: project30in20123 Comments

I just finished Day 1 of my 21 day Daniel Fast. I didn’t pass out, I wasn’t starving and I’m really glad I decided to do this. I didn’t make it to the grocery store until after work today, so I had to scramble just a bit for the first day. I make a large pot of whole grain, whole wheat pasta with veggies Sunday evening, which served as lunch. I supplemented that with a big salad of spinach, tomatoes, carrots and broccoli. I also had some fruit as a snack. For dinner, I went to my lifegroup (church small group) and our wonderful host made a delicious stew with potatoes, spinach and beans. It was delightful. photo (12) I have also found some quiet time during the day to pray and reflect and that was nice. I also made a big run to Trader Joes and bought a ton of fruits, veggies and things that will help me be successful while on the fast. I am particularly excited because I just ordered a pineapple corer which is going to allow me to enjoy pineapple (one of my favorite fruits) much easier. Below are some of the yummy goodies I bought last night. I also bought almond milk (for the first time), oats, whole wheat flour and lots more fruit!

If you are fasting, what has been your go-to meal? What didn’t quite work out?

My Pinky Promise group did this fast and I generally try to follow this regiment during the week now. My go-to’s are avocadoes/tomatoes or a greenie smoothie for breakfast, shaved zuchhini and crushed tomatoes for lunch (with the right spice, this is REALLY good and it’s vegan), and for dinner, curry butternut squash soup with apples is my go-to.

So proud of you Courtney!! xoxo

Thanks Angele! That curry butternut squash soup sounds delicious — I may have to try that. I am really thankful that I chose to do the fast and its so cool to share it with friends 🙂

Glad you’re making it work! Almond milk is delightful. I always get the unsweetened vanilla. Same for coconut milk. Good luck!
